Nicolas Saboly fut un abbé né à Monteux en 1614 et auteur de nombreux chants de Noëls connus dans le monde entier et dont certains font partie du folklore provençal.
En 1875, un buste surmontant la fontaine a été inauguré en présence de félibres provençaux, dont Frédéric Mistral et Joseph Roumanille, venus honorer la mémoire de l’abbé.
Ce buste en bronze était signé Amy de Tarascon. Récupéré pendant l’occupation allemande pour le métal, il fut remplacé par un buste en pierre. En 2005, la Commune commanda un nouveau buste en bronze d’après des photos du modèle original. Ce buste est l’œuvre de Noël Pourtal.
