Delicacies in April with Le Palais Gourmand

The month of April means the arrival of sunny days, but especially the return of the strawberry season! For the occasion, we are sharing a gourmet recipe that get everyone to agree.

Today we went to meet Jérôme Roland, pastry chef and chocolate maker at the Palais Gourmand. For several years, he and his team settled in the city center of Monteux to share his passion and talent in order to discover his creations and especially to delight the most gourmets! In addition to pastries, Le Palais Gourmand also prepares macarons, sorbets, but also unique creations for special events such as birthdays and weddings!

 

To celebrate the strawberry season, Jérôme has therefore concocted a delicious recipe based on one of the stars of Ventoux.

 

In the morning, we went to the peasant market in Monteux, one of the main strawberry producing cities along with Pernes-les-Fontaines and of course Carpentras. After a short stroll to meet local producers, we did our shopping to develop our recipe. Jérôme favors local and seasonal products, synonymous with quality for his creations!

Let's get serious, creating a magnificent dessert!

 

Preparation time: Approximately 1.5 hours - Quantity: Between 4 to 6 glasses

 

Crumble: Butter 60g - Brown sugar 60g - Almond powder 60g - Flour 60g - Salt

Vanilla lime whipped cream: 35% 200g liquid cream — 200g — Vanilla 1 pod — Mascarpone 50g - Icing sugar 25g — Lime zests 2g — Lime zests 2g

Strawberry Grenadine coulis: Strawberries 150g — Caster sugar 15g OR a few drops of grenadine syrup

Whole strawberries: 50g

 

THE DIFFERENT STEPS TO FOLLOW:

  • In a saucepan, heat 100g of liquid cream with lime zest and a vanilla pod and whisk everything together. Cover and let it brew for about ten minutes. Add the rest of the liquid cream, mascarpone and icing sugar and mix everything together. Let it rest for 1.5 hours before whipping the cream like a whipped cream.
  • Preheat the oven to 150°C. Meanwhile, cut the butter into cubes, mix with brown sugar, almond powder, flour and a pinch of salt. Mix well until a sandy state is obtained. Bake in the oven at 150°C for about 20 minutes.
  • For the strawberry coulis: Simply blend the strawberries by adding sugar or grenadine syrup according to your preferences.

MAKE WAY FOR THE TRAINING:

  • In a glass, place the crumble in the bottom
  • Using a pastry bag, cover with lime and vanilla whipped cream
  • Then add the strawberry coulis.
  • Sprinkle the top with the remaining strawberries and a few pieces of crumble.

All that's left to do is enjoy!

 

If you are impatient and can't resist this dessert, you can eat it right away. But ideally, you should put the glasses in the fridge for about 1 hour to enjoy all these fresh flavors!
